The Wood

It starts long before the kitchen opens — with Texas oak, seasoned and split. No gas. No electric elements. No shortcuts hiding under the grate.

Oak burns hot, slow and clean, and it gives off the sweet, savory smoke that soaks into everything we cook. It's more work than flipping a switch. That's exactly the point.

The Fire

Hours before service, the fire is lit and burned down to a bed of glowing embers — the namesake of everything we do.

Live fire doesn't hold a steady number like an oven. It breathes. Our grill cooks read the coals all night — feeding the flame, moving the heat, chasing that perfect zone where searing happens in seconds.
